Añadimos la cebolla y el puerro. Cuando hayan cogido color, añadimos el ajo y el pimiento verde hasta que se doren.
Añadimos la salsa de tomate casera y la dejamos reducir, hasta que se quede como una pasta. Añadimos arroz hasta que se mezcle bien. Luego verter el fumet y el concentrado de cabeza de gambas.
Dejamos cocinar el arroz entre 16 y 18 minutos.
Marcamos los gambones en la plancha y los colocamos sobre el arroz.
