En un cazuela con abundante agua y sal, cuece las vainas durante 5 minutos. Escurrelas, enfríalas en agua con hielo y reserva.
En una ensaladera mezcla las vainas, la cebolleta fresca, los tomates, el maíz y los pimientos.
En un pequeño bowl, prepara la vinagreta con el aceite, la mostaza, el vinagre y una pizca de sal. Mezcla bien con una cucharilla e incorpora la vinagreta a la ensalada.
Sirve en platos individuales con unas lonchas de jamón de pato.
